The right chocolate for chocolate fountains will depend largely on the specifics of any given recipe. Some recipes call for dark, bitter chocolate, while others require only the creamiest of milk chocolate. And in some cases, combinations of chocolates are needed, often combined with other flavors such as peanut butter or a fancy liqueur.

One should be aware, however, that not all chocolate for chocolate fountains are created equal. The best results require starting with the best chocolate available, and unfortunately, this often means avoiding the grocery store in favor of a quality chocolate maker. One should also keep in mind that it often takes a lot of chocolate for chocolate fountains to operate properly. First, these fountains function due to the pump that is incorporated into their design, and if the pump does not have an adequate amount of melted chocolate from which to draw, it can burn out. Secondly, in order to create a "fountain" effect, the chocolate reservoir must be full, and this can often require 10 or more pounds of chocolate.
